In late 2019, Tasmanian owned Norton Hospitality Group had the opportunity to purchase the iconic restaurant, Hallams. The NH Group wanted to honour the historic reputation, which has been built up over 26 years by the Hallam Family, by keeping the historic name connected to the business.
After an extensive renovation in 2020, we opened our doors with a new team and a new Hallams. Headed by our executive chef, Jake Kowalewski, Hallams is focused on celebrating the finest and freshest seasonal Tasmanian produce. Our aim is to ensure you have an exceptional dining experience with us at Hallams, the finest seafood restaurant in Launceston.

Our Executive Chef Jake Kowalewski’s passion for food was ignited as a young boy, fishing with his grandfather and picking fresh fruit and vegetables from the family garden. And with this, a fascination for fresh quality produce was born.
Jakes road to Executive Chef began as a 21-year-old, who “fell” into a kitchen hand position. He had no clue about food or hospitality, but it wasn’t long before he had fallen in love with the fast-paced and intense kitchen environment.
He spent the next few years as an apprentice at Sydney’s Hilton Hotel, and then with Luke Mangan at his restaurant Glass Brasserie, where he progressed to senior Chef De Partie.
Jake had the opportunity to travel all throughout Asia, cooking along the way. From doing events in Tokyo and Hong Kong, to the prestigious Eastern and Oriental Express Train from Singapore to Bangkok.
Jake likes to create his dishes. Keeping things simple, uncomplicated and clean. With the Motto “Simplicity is the best ingredient”. Jake believes “Having a great product is the first step to creating a great dish”, and being in Tasmania, we have access to some of the freshest and best ingredients in Australia.
